Motherf***in Sweet Potatoes

Let’s eat!

If I want some comfort food to eat on the sofa infront of the TV I always make these sweet potato wedges. They never fail to put a smile on my face. I coat them in spices, herbs and olive oil and the result is amazing! This recipe isn’t anything outstanding or special but I want you to be as comforted from them as I am. Delicious!

You will need:

8 Medium Sweet Potatoes

 4 Thyme Sprigs

2 teaspoons of Cinnamon

Salt & Pepper

Enough Olive Oil to coat all the wedges

3 teaspoons of Paprika 

A handful of toasted sliced Almonds or Pine Nuts


To Do

Pre-heat the oven to 190. Chop the sweet potatoes into wedges. Place in a baking tray along with the herbs, oil and spices. Mix with your hands so every potato is completely covered. Cook for around 50 minutes until they’re nice and soft.

Remove them from the oven and sprinkle the nuts on top for a little crunch. I like to use toasted flaked almonds or pine nuts.

Enjoy dipped in some humous.
