Blondies.

I don’t think I’ve ever eaten a Blondie before. I saw a picture of some in a magazine and thought I need to make those asap!! This is a plant based recipe with a secret ingredient that you may not want to tell people if you make these to share. These blondies are deliciously dense, crammed with almond butter, coconut sugar and chocolate chips. Perfection.

Don’t be put off by the chickpeas, you can’t taste them at all. They help in making the blondies as dense and as dreamy as possible.

 

You will need:

1 Can of chickpeas drained and rinsed

100g Dark chocolate broken into small pieces

140g Almond butter

100g Coconut sugar

60ml Maple syrup

1 Teaspoon of Vanilla powder

Pinch of salt

100g Ground almonds

 

Put all of the ingredients together in a food processor aside from the chocolate and blend. Make sure everything is smooth and mixed in. Once everything is mixed, fold in the chocolate pieces with a spoon.

Line a baking tray with baking paper and put the mix into the tray.

Bake in a 165c oven for 40 minutes. Leave them to cool completely in the tray before cutting otherwise they’ll look messy.

Serve with vanilla ice cream, custard or just eat straight from the tray.
