Banana and dark chocolate is one of my all time favourite combinations. It’s absolutely delicious. I had a bunch of over ripe bananas to use up and was flipping through my cookbooks looking for a delicious way to use them. I came across these muffins and had to make them.
This recipe is from Niomi Smart’s ‘Eat Smart’ which is full of delicious plant based meals and treats. I made a batch yesterday for my family and…needless to say they didn’t last long!
3 Ripe Bananas
1/3 Cup Of Almond Milk
50g Dark Chocolate Chips
1.5 Cups of Spelt Flour
3 Heaped Tbsp of Coconut Oil
3 Tbsp of Coconut Sugar
0.5 Tsp of Vanilla Powder
1 Tsp Baking Powder
Heat your oven to 180. Put 8 muffin cases into a cupcake tray.
Mix all the dry ingredients together apart from the dark chocolate. Heat the coconut oil in a saucepan on a low heat. Mash the bananas with a fork and add them to the coconut oil along with the almond milk.
Mix the wet ingredients with the dry. Add the chocolate and mix that in too.
Pour the mixture equally into the 8 muffin cases.
Bake for 25-30 mins.
