Rainbow Salad

A salad that packs a punch

I love salad if it’s done right, otherwise it can be the most boring thing in the world. I’ve seen rainbow salads all over Pinterest so I thought I’d give it a try to add some colour to my blog.

If you’re looking to incorporate more veggies into your diet, then a salad is an easy way. Try and make it look as appealing as possible then you won’t feel so healthy eating it. As long as you have a delicious dressing then you can’t go wrong.

During the summer I’ve eaten more salad than ever before…I’m craving the crunch! Rainbow salads look way more professional than an average salad. If you’re having people round, just chop up some colourful veggies and serve.

I really don’t want to appear patronising here because it’s pretty obvious how to make a salad but just in case…

Ingredients

Red Cabbage

Tomatoes

Carrots

Salad, I love Rocket and Baby Leaves.

Yellow and Red peppers

Cucumber

Avocado

 

Get a grater and shred the peppers, carrots, cabbage and cucumber. Add the tomatoes and avocado to the mix and serve on top of the leaves.

Use whatever dressing is your fave. I’m easily pleased with olive oil and balsamic vinegar.

I always add humous to my salad because humous is everything to me.
